Fukamushi means deep-steamed, and that is the whole difference: the leaves are steamed for roughly two to three times as long as a standard sencha. The longer steam breaks down the leaf's cell walls and shatters it into smaller particles, so more of the leaf itself ends up suspended in your cup. That is why a fukamushi brews cloudy and dark green, and why it tastes fuller, sweeter and rounder than a standard sencha, with much of the sharp astringency smoothed away. Because the particles are so fine it also infuses fast, so a short steep is enough and over-steeping will make it heavy. It is the style to reach for if regular sencha has ever tasted too sharp to you.

The henta sencha saemidori is of course grown by Mr. Henta, a talented farmer in Kirishima, Japan. When we met with Mr. Henta for the first time, he taught us so much about the intricacies of different tea plants.
What was really interesting to us was his extensive knowledge of different tea plant varieties, also called cultivars. Each of these cultivars is a little bit different not only in terms of flavor, but also in how they grow.
Although Mr. Henta cultivates green tea on a very small field, he produces 8 different tea plant varieties in total. He has become an expert at blending these different tea plant varieties together to capture the best aspects of each.
Origin: KirishimaJapan
The Henta Sencha Saemidori is cultivated by the skilled farmer Mr. Henta in Kirishima, Japan. During our initial meeting with him, we gained valuable insight into the complexities of various tea plants.
What piqued our interest was Mr. Henta's extensive knowledge of tea plant cultivars, each with unique flavors and growth patterns. Despite cultivating green tea on a small plot of land, he manages to cultivate a total of 8 different tea plant varieties. Through his expertise in blending these cultivars, he is able to capture the finest qualities of each.
Cultivar: SaemidoriTea variety
As the name would suggest, the sencha saemidori henta is made from the Saemidori cultivar.
Saemidori: Saemidori is a difficult tea plant variety to produce, as it can be quite sensitive to the cold and the yield is lower than Yabukita. Nonetheless, this tea cultivar is still used because of the light sweet flavor it produces. While normally reserved for premium green teas like gyokuro and matcha, the cultivar makes an appearance to produce a deliciously flavorful henta sencha saemidori.
Preparation & ServingsUp to 60 cups
Hot brew: 5 g of leaves, 150 ml of water at 70°C (158°F), 1 minute.
Brew it again: the same leaves give 3 infusions. Re-infuse 2 more times with water at the same temperature, 20 seconds each; every infusion tastes a little different.

How to Make Fukamushi Sencha Like a Pro
To prepare this sencha saemidori, you can use a lower temperature water and a shorter brewing time. We’ll show you a step by step guide to help prepare this tea.
Heat the Water
Heat water to 70°C (158°F).
Add the Leaves
Add 5 g of leaves to a kyusu teapot.
Steep
Pour 150 ml of water and steep for 1 minute.
Pour & Brew Again
Pour out every drop, then brew the same leaves 2 more times (20 seconds each).
