The Sencha Shizuku with Matcha Powder is designed to be cold brewed. The matcha releases into the infusion to produce a cloudy color and fruity flavor
To evaluate the flavor of the Sencha Shizuku with Matcha Powder we look for a combination of the aroma and also how the tea interacts with the palate. Does it produce a dryness, acidity, minerality, sweetness or umami? We’ll also evaluate the texture of the tea, otherwise known as mouthfeel. Finally, for sencha tea, we’ll evaluate it based on how vegetal the taste profile is as this is a common characteristic throughout most sencha teas.
The appearance of the sencha with matcha powder is light green, as the sencha leaves are coated with matcha powder.
There is a strong, fruity aroma coming off of the leaves which transforms into a steamed vegetable aroma as the leaves are soaked.
The shizuku sencha with matcha powder begins with a nice round sweetness and later transforms into this powerful steamed vegetable and umami flavor that dominates the mid-palate. The tea then finishes with a light acidity without any dryness.
The mouthfeel of this tea is rich and thick thanks to the addition of the matcha powder, but it still has this light playful acidity and minerality. There is very little dryness, but an intense umami and a mild sweetness that starts off strong and then dissipates.

For larger tea farmers, we require JAS certification, which involves rigorous soil sampling and analysis to ensure the tea is produced in accordance with organic and pesticide-free standards. However, we understand that smaller tea farmers may not have the resources for soil testing. In such cases, we accept the "pesticide-free" label to allow tea lovers to discover their teas, while still maintaining our commitment to sustainability and quality.
Even though the shizuku sencha was designed to be a cold brew, it also works incredibly well as a hot brew tea. Let’s walk through how to prepare this tea as a hot brewed tea, and then we’ll get into the cold brewing methods.
Heat up some water to a temperature of 60 degrees Celsius (140 degrees Fahrenheit)
Add 5 grams of the shizuku sencha to your teapot or strainer
Pour in 150ml of the hot water into the teapot and let the leaves sit for 1 minute
After the leaves are done brewing, you can pour out the tea and enjoy your delicious shizuku sencha!
Even though the matcha will be released in the first brewing of the shizuku sencha, there is still plenty of flavor left to be had in the leaves! You can brew the tea leaves 2-3 more times and get completely different cups of tea. Just use the same temperature water and a brewing time of 20 seconds
When you cold brew green teas, you extract less of the bitterness so you’re left with a smoother and sweeter tea. If you want to brew the shizuku using this method, you can add 5 grams of leaves to a pitcher or a cup, pour in 150ml of room temperature or chilled water and let the tea sit for 3 hours. When you come back, you should have a cool, refreshing cup of green tea waiting for you!
To make a tasty cup of Sencha Shizuku with Matcha Powder, you will require a kyusu teapot. The best type of teapot for this is the kyusu teapot, which has a round mesh filter that helps strain the tea leaves as you pour. If you don't use this specific teapot, there is a risk of the fukamushi sencha becoming clogged while pouring and overbrewing the tea.
In case you do not have a teapot available, we suggest using a tea strainer for the Sencha Shizuku with Matcha Powder. This will help separate the tea leaves while pouring, preventing overbrewing of the tea.
Information about the farm
This tea comes to us from the farmer Mr. Nuruki, a talented young farmer in Chiran. Mr. Nuruki operates a small farm in southern Japan where he is able to cultivate a wide range of tea plant varieties. He has been successful in blending these different tea varieties together to create a number of fantastic tea blends. These tea blends incorporate the best aspects of each tea variety, to create flavors that are well balanced and unique.

This tea is grown in the small town of Chiran in the southernmost tip of Kyushu. This region greatly benefits from the mild subtropical climate and the volcanic activity, creating nutrient rich soils and mild winters. Because this area is so warm, it allows for the growth of more delicate tea plant varieties, producing lighter and sweeter green teas.
This tea is made with a blend of 4 different tea cultivars, Yabukita, Asatsuyu, Asanoka and Yutaka Midori.
Yabukita is the most common tea cultivar in Japan, known for its strong grassy or vegetal characteristics and bold umami flavors.
Asatsuyu means “clear green” and it is known for producing smooth and sweet green teas even when it is unshaded.
Asanoka tends to produce a nice sweetness in the tea, a medium umami flavor and a pleasant cereal or starchy note.
Yutaka Midori is the second most popular tea variety in Japan and the name means “abundant green” as a reference to its vibrant green color and strong, steamed vegetable taste profile.

A Nio video recommended this for Cold Brew. I have been trying lots of Sencha to try to find one that holds up with ice to drink throughout the day. I increased the recommended 5 grams to 6grams/ 500ml water/3 hours in fridge, decant and prepare a second and a third brew as the picture shows. The first brew was perfect. Good flavor, the matcha adds just the right umph. The second and third brews had a lot flavor the first time when I used 5 grams so I’m looking forward to seeing how a 4th brew holds up this time using the 6 grams. Very flavorful and enjoyable tasting cold brew tea. I will be reordering both this and the other recommended cold brew Gyrokuro Karigane soon! There is so much to learn about different Japanese greens so I really appreciate the blogs and videos from Nio, but especially being able to buy authentic Japanese tea from a US source to support the tea farmers and to avoid customs and international delivery costs. Interesting sencha. Warm dry leaves have a very savory aroma. Pours a very vibrant green with a nice little layer of foam. Very leggy, thick brew. It's full bodied. There's Journey from sweet to bitter through each steep. Starts out very sweet and umami with almost no bitterness but progresses along the scale until a bite of bitter with the last sip. Each progressive steep goes through this journey until around 4 when the matcha has all washed through and your left with a dry and refreshing minerality. Not my favorite, but certainly fun and interesting!

This is a tea that tasted different with each steep I had of it, which is always fascinating! The dry leaves gave off aromas of sweetness, honey, and melon. Once wet, I got sweet honey and melon aromas again, but these were lighter. During the first infusion, I got lots of earthy, matcha, steamed vegetables, umami, and some sweet notes too!
