How to prepare the tea

  • Step 1

    Sift 2 grams of Matcha Kiwami Sakamoto into your chawan.

  • Step 2

    Heat water to 70°C (160°F).

  • Step 3

    Mix with a small amount of water into a paste, then pour in 100ml.

  • Step 4

    Gently scrape the sides and bottom of the bowl to combine the matcha into the water.

  • Step 5

    Using your wrist, whisk the matcha up in rapid zigzag motions until a light green foam appears on top.

  • Step 6

    Sip and enjoy the bold, refined taste of Matcha Kiwami Sakamoto.

My wife and I are new to matcha, and we were delighted when we found the Nios website. The Tasting Notes helped us choose the Yame Okumidori Miyakoand Kiwami Sakamoto matchas. Nios was generous in gifting to us a packet of Oishi Ceremonial Saemidori. The Tasting Notes did its work and we are enjoying all three.

This Sakamoto Kiwami matcha is very special, it has deep umami, with almost zero astringency, but very interestingly it has pleasant earthy/mineral notes, the organic fertilizer and volcanic soil of Kagoshima must be working their magic on this specific tea. It has almos NO marine/savory notes (e.g. seaweed) like other high umami matchas from places like Uji (especially on cultivars like uji-hikari or gokou), but in my mind that's a good thing, it's an interesting and highly appealing alternative to bold umami. Also very creamy. God bless Mr Sakamoto 🍵🙌🙏.

Wonderful, notes exactly as described... love the umami. Super creamy if whisked right, NO need for milk, sugar, etc.—just 70C water and matcha please!!!! my mix 85g water with 2.5g matcha.

This matcha has been one of the more unique I have tried. Kiwami means "Pinnacle" and on the back label it states it is "gyokuro powder" which is exactly what it tastes like. I prepare mine even less concentrated than usucha, and it is still deep green and smooth with a hearty green tea flavor. While I can't say it's my all time favorite, this one is very good, unique, intentional, and very high quality. It seems Mr. Sakamoto had something special in mind when creating this one. I'm glad I tried it and appreciate the skill that went into making it.
