To evaluate the Kyoto Matcha Masudaen, we evaluated the texture of the matcha as well as the flavor. Does it produce a dryness, sweetness, minerality or acidity? We’ll also evaluate how thick or rich the consistency of the matcha is, otherwise known as mouthfeel. Finally, for matcha specifically, we like to take a look at the vegetal flavor of the tea, as this is a profile consistent across all types of matcha.

Step 1 - Observing the Appearance

The finely ground powder of the Kyoto matcha, which is made from shade-grown green tea leaves, boasts a strikingly vivid and alluring deep jade green hue that is sure to captivate and delight the senses.

The aroma coming off the matcha as it is mixed with the water is slightly fruity, with with a hint of chocolate

Step 3 - Tasting the Tea

The Kyoto matcha begins with a light creaminess, which later develops into a slightly grassy, steamed vegetable flavor. The tea finishes off with a slightly nutty flavor profile and a mild floral astringency that leaves the palate with a fresh, slightly dry sensation.

Step 4 - Evaluating the sensation on the palate

This Kyoto matcha dries out the palate slightly, but it is well balanced by the rich, thick mouthfeel and the hint of acidity. The tea has a hint of these umami and grassy flavors, but overall the sensation is creamy and smooth.

How to prepare the tea

To prepare the Kyoto Matcha, you can follow these basic steps to get the most out of your tea. Once you master these steps, you can get creative and add your own spin to them. It's important to follow the steps closely in the beginning to practice the proper technique.

  • Step 1

    Begin by sifting 2 grams of matcha powder into a bowl to remove any clumps that may have formed due to humidity exposure.

  • Step 2

    Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit. 

  • Step 3

    Add roughly 1 tablespoon of water to the bowl and mix the matcha powder to form a paste that is evenly distributed. Then, pour in 100ml of water.

  • Step 4

    Gently scrape the bowl's sides and bottom to blend the matcha with the water.

  • Step 5

    Lastly, use your wrist to whisk the matcha in swift zigzag motions until a light green foam appears on top.

Necessary teaware

In order to prepare matcha, it's essential to have a few key accessories on hand, including:

  1. A matcha bowl, or chawan, which is a wide and shallow bowl made of either ceramic or porcelain. It is specifically designed to help you easily and effectively whisk matcha powder into a frothy and delicious tea.
  2. A matcha whisk, or chasen, which is made of bamboo and features numerous thin tines. This tool is used to help mix and froth the matcha powder with hot water, ensuring that the tea is smooth and evenly mixed.
  3. A matcha scoop, or chashaku, which is a bamboo scoop used to measure out the right amount of matcha powder and transfer it to the matcha bowl. This ensures that you're using the right amount of matcha powder for a perfectly balanced cup of tea.
  4. A sifter, which is highly recommended for both traditional Japanese tea ceremonies and everyday use. Sifting the matcha powder helps to ensure a consistently smooth texture and high-quality cup of matcha.

Location of production and farmer

Information about the farm

The Kyoto Matcha is cultivated by Mr. Masuda, a skilled tea farmer from Shizuoka who oversees a substantial tea field. During our visit to his farm, Mr. Masuda gave us a comprehensive tour of the tea production process, from growing to packaging.

Additionally, we discovered the various grades of matcha tea that he produces on his tea field. The first harvest of tea plants yields ceremonial grade matcha that is silky smooth enough to enjoy plain, whereas later harvests are used to make matcha that blends perfectly with lattes.

As the name would suggest, the Kyoto Matcha is grown in Kyoto, Japan. Kyoto has a long history when it comes to the production of premium matcha tea. The first tea plants to be planted in Japan were planted on the ground of a temple North of Kyoto in 1192. Since then, the region of Kyoto and Uji has been a hotbed of tea production. particularly matcha.

Cultivar and tea plant variety

This matcha is carefully crafted using a blend of three distinct tea cultivars: Yabukita, Sayamakaori, and Okumidori.

  • Yabukita

    Yabukita, renowned for its delightful vegetal notes and robust umami flavor, has become the most popular tea plant variety in Japan.

  • Sayamakaori

    Sayamakaori, a relatively new cultivar, is prized for its high catechin content and is commonly used in black teas, but also yields a bold and flavorful green tea.

  • Okumidori

    Okumidori, added to the blend for its ability to impart a smooth finish and a rich, full-bodied taste, adds depth to the matcha's flavor profile.

I make a matcha latte everyday now that I’ve found Nio Teas. I no connoisseur of tea but have been drinking green tea for 40+ yr. I always drank it hot and plain but now I’ve discovered matcha latte I am hooked. I drink it iced for summer. So refreshing. I put in Califia organic almond milk with a splash of nutpods vanilla creamer. OMG good! I hardly drink coffee now….weird.

Sehr schöne Farbe und nicht bitter/grasig. Heute Morgen den Kyoto Masudaen geöffnet und eine Schale Matcha zubereitet. Gemäss Geschmacksprofil wird er als süsslich bezeichnet. In meinem Fall war er aber unangenehm bitter. Auch war die Farbe des Tees nicht so leuchtend grün wie ich es erwartet hätte sondern einen Stich bräunlich. Vielleicht gab es hier eine Alterung im Teepulver, trotz geschlossener Vakuumverpackung? Ich werde morgen nochmals testen und sonst wird er halt mit Milch gestreckt...

The taste profile chart is the most accurate and unbiased rating chart from a matcha brand. I was pleasantly surprised and would repurchase. Also the packaging has a cute design and is resealable.
