Post-fermented tea is made by putting finished leaf through a controlled fermentation, a step no other Japanese tea category uses. Ours is fermented in Uji with koji, the same mould used to make soy sauce, sake and miso, and that is what gives it its pink colour and its gentle acidity. The result tastes almost nothing like green tea: strawberry-like and slightly tart, which is why it is known in Japan as the rose of tea. Fermentation leaves very little caffeine behind, so it can be drunk at any hour, hot or chilled over ice. It is the most unusual tea we sell, and the one we would hand to someone who thinks they do not like tea.

The Nadeshiko Rose Japanese fermented tea comes to us from the talented farmers at Chanoka in Uji. When we visited Mr. Takada, he introduced us to so many different types of rare teas and this is one of them.
Mr. Takada and his family have been in the tea industry since 1907 when they opened their tea plantation. He is able to lean on multiple generations of tea knowledge to produce excellent quality green tea, oolong tea, black tea and Japanese fermented tea.

This Japanese fermented tea is produced in Uji, Japan. Uji is known for consistently producing some of the best quality teas in Japan. The soil is great quality, the air is clean and misty, the terrain is hilly and the winters are relatively mild with no frost. This climate has produced excellent teas for hundreds of years.
Cultivar: BenifuukiTea variety
The Nadeshiko rose Japanese fermented tea is made using the Benifuuki cultivar, which is normally reserved for Japanese black teas or “wakocha”
Benifuuki: The benifuuki cultivar has a higher concentration of catechins, so while it produces an astringent green tea, the variety works exceptionally well in black teas and Japanese fermented teas. The teas produced with Benifuuki yield a smooth taste and excellent aroma, as the fermentation and oxidation process really mellows out the catechins.
Preparation & ServingsUp to 60 cups
Hot brew: 5 g of leaves, 150 ml of water at 60°C (140°F), 1 minute.
Brew it again: the same leaves give 3 infusions. Re-infuse 2 more times with water at the same temperature, 20 seconds each; every infusion tastes a little different.
Cold brew: best enjoyed hot, we do not recommend cold brewing this tea.

How to Make Fermented Tea Like a Pro
To get the best out of your Japanese fermented tea, it's advised to follow these instructions. If you brew the tea at the wrong temperature or for the wrong time, you may end up with either a bitter or watered down flavor.
Heat the Water
Heat water to 60°C (140°F).
Add the Leaves
Add 5 g of leaves to a kyusu teapot.
Steep
Pour 150 ml of water and steep for 1 minute.
Pour & Brew Again
Pour out every drop, then brew the same leaves 2 more times (20 seconds each).

We only buy from fields grown without pesticides or chemicals. We ask each farmer directly how they manage their land, visit the plantation and processing facility ourselves, taste every harvest before committing, and check that the biodiversity around the fields is alive. Small family farms don't always carry paperwork — so we verify it in person instead.

Unopened items in their original packaging can be returned within 30 days. Tea is sealed for hygiene, so opened packs can't come back — but the swap above covers exactly that situation. Return postage is yours unless the item arrived damaged, defective or incorrect.
Orders to the US and EU ship domestically from our local warehouse, so there's no customs charge and no duty. A small number of destinations are served from our Japan warehouse, where your own customs authority may apply import duty, VAT or a carrier handling fee on delivery.
